comfort food (and -ohmygosh- more Chickenfoot!)

6 cups all-purpose flour

3 teaspoons baking powder

1 teaspoon baking soda

1/3 cup sugar

2 teaspoons salt


2 1/4-oz. packages active dry yeast

1/2 cup warm water (100 degrees to 115 degrees)

1 cup oil

2 cups buttermilk

In a large mixing bowl mix together the flour, baking powder, soda, sugar, and salt.  In a separate bowl, dissolve the yeast in water; add the oil and buttermilk.

Pour over the dry ingredients and mix thoroughly.  Pull off pieces the size of a golf ball and place in greased muffin pans.  Bake in a 400 degree oven for 15 minutes.  [My stove was ‘acting up’ this evening; the second batch of muffins, I baked in a 350 degree oven for about 23 minutes.]

Makes 2 dozen muffins (or a few more than that – I baked 2 1/2 dozen this time).

A good meal (we love stew!) for a rainy evening.
