CREOLE CORN MUFFINS

2 eggs, well beaten

1 1/2 cups milk

3/4 cup shortening, melted

2 tablespoons chopped green pepper

2 tablespoons chopped onion

2 tablespoons chopped pimento

3/4 cup grated American cheese

2 1/2 cups flour

1 teaspoon salt

2 tablespoons baking powder

4 tablespoons plus 1 teaspoon sugar

4 tablespoons plus 1 teaspoon cornmeal

1/2 teaspoon red pepper

Mix the egg, milk, and shortening.  Add the green peppers, onions, pimento, and cheese to the flour, salt, baking powder, sugar, and cornmeal.  Add the milk mixture and stir only enough to mix.  Bake at 400 degrees F. for 25 to 30 minutes.
